Ginger and Turmeric vegetable soup

Ingredients:
1 tablespoon olive oil or ghee
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
1 large carrot, diced
1 celery stalk, diced
1 medium-sized sweet potato, peeled and diced
6 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper to taste
Juice of half a lemon
Fresh cilantro or parsley for garnish (optional)
Instructions:
Sauté Aromatics:
Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
Add Ginger and Turmeric:
Add minced garlic, grated ginger, and grated turmeric to the pot. Sauté for 1-2 minutes until fragrant.
Vegetable Prep:
Add diced carrots, celery, and sweet potato to the pot. Stir and cook for another 5 minutes.
