Avocado Vanilla Pistachio Smoothie Recipe

This thick, delicious rich Smoothie is my recent favorite. I had a few avocado’s which I needed to use and was tired with guacamole so came up with this mouth-watering and scrumptious recipe. I am sure that once you try it, you are going to fall in love with it.

It is a complete meal and you can easily use this for breakfast or lunch.

This smoothie is rich in fiber, phytosterols (which helps in lowering cholesterol), Protein, monounsaturated fat( helps in increasing HDL and lowering LDL), vitamin B6, thiamin, phosphorus, and copper. Avocados are packed with 20 vitamins, minerals, and phytonutrients including mono and poly saturated fats. Ginger helps in improving digestion and is a superfood with amazing anti-inflammatory properties.

You can add 1 tablespoon of high quality organic non-GMO MCT oil and this becomes a perfect meal with low carbs and high in healthy fats and protein for people who are on a keto diet.

(makes 2 servings)

Ingredients:

  • 1 medium-sized ripe avocado

  • 1/4 cup pistachio nuts without shells

  • 1 ready to go organic vanilla protein shake or 1 scoop of organic vanilla protein powder ( take high quality, low sugar, organic non-GMO one)

  • 1-2 drops of vanilla essence

  • 1 small-medium size piece of fresh ginger root

  • 1/2 tsp of cardamom

  • 1 pinch of saffron (optional)

  • 1 tablespoon of high quality organic non-GMO MCT oil (optional)

  • 1/2 teaspoon of cinnamon

  • a few ice cubes

  • 1 tbsp of honey or maple syrup if your protein shake is unsweetened.

Steps:

  1. Mix all the ingredients in a blender.

  2. Enjoy!
