Zuccini noodles with creamy avacado cilantro sauce
This diabetic-friendly recipe is a great choice for a healthy, low-carb meal. This recipe is packed with fiber, vitamins, and minerals, making it ideal for managing blood sugar levels. Here’s a simple yet delicious recipe:
**Ingredients:
- 2 medium zucchinis, cut into noodle style (zoodles)
- 1 tablespoon avocado oil or olive oil
- 1 cup cherry tomatoes, halved
- 1 cup broccolini florets
- Fresh herbs (e.g., basil, parsley) for garnish
- 2 tbs parmesan cheese for garnish
Avocado Sauce for Zoodles
- 1 avocado
- 2 garlic cloves
- juice 1 lemon
- Handful of fresh basil/cilantro/parsley/herb of choice
- 1/3 cup of water (more or less depending on desired thickness)
Instructions:
1. Add salt to the zucchini noodles, mix well, let it sit for 5 minutes, and then squeeze them to remove all the water.
2. Heat the avocado or olive oil in a large pan over medium heat.
3. Once the oil is warm, add the cherry tomatoes. Sauté for 2-3 minutes until they begin to soften.
