Simple and easy breakfast : Upma

Upma is a very easy to make and simple breakfast dish served in various part of India. It is similar to porridge and when served fresh and warm it is comforting and filling.

Recipe serves 3

Ingredients:

1 tablespoon Ghee

1/2 cup Semolina or Sooji flour

1 Tbs chopped roasted cashews

1 Tbs Rasins

1 Tbs sesame or olive oil

1/2 onion finely chopped

3-4 green chilies finely chopped

1 teaspoon mustard seeds

1 pinch Asafetida powder

1 teaspoon split Urad dal

2-3 curry leaves

1 cup hot water

1/2 cup Yogurt

salt to taste

Boiled peas and carrots (optional)

Method:

In a medium saucepan, add the ghee and heat the pan with ghee in it on medium flame

Once the ghee melts, add 1/2 cup of Semolina Flour and roast it

Once the flour is roasted take it out in a bowl and set it aside for later use. You will know by fragrance or when the color changes from light cream to dark cream.

In the same saucepan, add oil and mustard seeds.

Once the seeds start to crackle, add asafoetida powder and urad dal. Once the dal turns brown, add curry leaves, roasted cashews, raisins, chopped onions, and finely chopped chilies. You can also add your optional cooked peas and carrots.

Once the onions turn translucent, add roasted semolina flour, salt, and hot water.

Mix thoroughly and let it cook till all the water is absorbed.

Add yogurt, mix thoroughly and cook for a few minutes till all the liquid is absorbed.

Your Upma is ready to enjoy.
