Ingredients:
1 cup split yellow moong dal (lentils)
2 cups pumpkin, peeled and diced
1 onion, finely chopped
1 tomatoes, chopped
1 tablespoon green chili, ginger, and garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
2 tablespoons cooking oil
Fresh coriander for garnish
Instructions:
Prepare Moong Dal:
Rinse the moong dal under cold water. Soak it for an hour. In a pot, cook the moong dal with 3 cups of water until tender. Set aside.
Sauté Aromatics:
In a large pan, heat oil over medium heat. Add cumin seeds and let them sizzle.
