Goat Cheese Frittata
This goat cheese frittata is a very filling brunch recipe for a weekend morning. The recipe serves 4 people.
Ingredients:
8 eggs
1 teaspoon salt
1 teaspoon pepper
1/4 cup parmesan cheese
1 tablespoon olive oil
2 cloves garlic
1/2 an onion
1/2 a bell pepper or capsicum
2 jalapenos
2 oz goat cheese
parmesan for topping
Recipe:
Into a large mixing bowl crack 8 eggs and add a teaspoon of salt, a teaspoon of black pepper, and a quarter cup of parmesan cheese.
Using a whisk, whisk it till eggs and seasonings are well mixed.
Once done, set it aside and take a tablespoon of olive oil and add it into an oven-safe pan and turn the stove on to medium to low heat.
Then into this add 2 cloves of chopped garlic and saute the garlic for 1-2 minutes.
Then add a chopped mixture of half an onion, half a bell pepper, and two jalapenos and saute for 2-3 minutes. Do not overdo it as you want them to maintain the crunch.
Once veggies are ready add in the egg mixture from earlier and allow it to settle in. Also, give it a quick stir to make sure that the egg mixture reaches all the way to the bottom of the pan. and also to make sure that all the veggies are not bunched up in one area of the pan as you want the veggies to be spread out so that you get them in every bite.
Next, take pieces of goat cheese and start to drop them into the pan. Make sure to spread it out evenly so that you have these small goat cheese pockets in every section of frittata. Let the frittata cook on the stove till the edges are cooked, add a layer of parmesan on top, and then transfer the pan to the oven which is preheated at 400 degrees F.
Cool it in the oven for about 10 to 12 minutes. After 10 to 12 minutes the frittata should be done and you will notice the dish is not going to be runny or moving around when you shake the pan.
Use an oven mitt to remove the pan from the oven as you don't want to burn your hand
Once you remove the pan from the oven and allow it to cool for a few minutes. After this take a small knife or a little spatula and just run it along the edges of the pan to free the frittata from the pan and make sure it's not sticking to the sides.
Remove it from the pan on the plate, cut it into pieces and serve.
