Chocolate chip pancakes with Almond flour

Today I bring you gluten-free or wheat-free chocolate chip pancakes. This recipe is ideal for people who do not want to eat wheat or for people who are on a keto diet.

The recipe will make 6 pancakes which you can either serve with organic maple syrup or organic honey or make berry compote. I serve them with homemade berry compote.

Dry ingredients:-

2 Cups of almond flour

1 teaspoon of baking soda

Pinch of nutmeg

Pinch of salt

1/4 teaspoon of cinnamon

1/2 teaspoon of sugar

Wet Ingredients:

3 organic eggs

1 tablespoon of vanilla extract

1/2 cup of milk

1/3 cup of organic chocolate chips

Organic ghee

Method:

Take all the dry ingredients, mix them in the mixing bowl, and then sift them through a sieve to remove all the clumps.

Then add the eggs and vanilla essence. Mix well with a whisk.

Then add the milk. Mix well with a whisk or hand blender to make sure all the clumps are removed and a smooth batter is formed.

Heat a non-stick skillet or a griddle on medium flame, apply ghee and pour the batter on it with a ladle or large spoon.

Once the edges turn light brown, flip the pancake and let it cook on the other side for 1-2 minutes.

Once done on both sides, take it out on the plate and serve them hot either with organic maple syrup or organic honey or fruit compote.

You can also top them with few nuts of your choice or extra chocolate chips.
