This recipe serves 3 people.
Ingredients:
3 onions
3 tablespoons butter
2 bay leaves
1 teaspoon thyme
1 teaspoon garlic powder
1 cup water
4 cups vegetable stock
salt and pepper to taste
6 tablespoons shredded cheese
3 tablespoons breadcrumbs
1 cup water
2 teaspoons corn starch
Method:
Cut the onions in to slices.
Take deep sauce pan, add 3 table spoons of butter and allow it to melt on medium heat
Add the onions and sauté them for 15-20 minutes till they become brown while stirring constantly. Also add 2 bay leaves and 1 tea spoon of freshly ground thyme.
Add tea spoon of garlic powder. Mix well.
After 15 minutes remove bay leaves. Add 1 cup of water and 4 cups of vegetable stalk.
Add black pepper and salt to taste. Boil the soup. Once it comes to boil, cover with lid and let it simmer for 15-20 minutes.
While the soup simmers, prepare nice breaded cheese balls to add in the soup.
For cheese balls, take 6 table spoons of shredded cheese and 3 table spoons of bread crumbs into a large mixing bowl.
Mix well with hand and form the dough. Once the dough is formed, take small portions of the mixture and form small balls. Size of the balls is little bit smaller than munchkins or ping pong balls.
Once the balls are ready, take a small sauté pan, add 1 table spoon of oil and allow it to heat up on medium heat.
Once the oil is heated, add the cheese balls and sauté them until they are golden brown.
Once cheese balls are ready, remove them from the pan and set them aside till you are ready to plate.
Next take a small cup of water, add 2 tea spoons of corn starch, mix well and add it to your soup which is simmering. Mix well and bring it to boil for 5 minutes.
Now it is time to plate. In a soup bowl, add your soup, top it with 2-3 cheese balls and finally with 1 table spoon of shredded cheese. Enjoy while hot.
