Wholesome Clear Vegetable Soup: A Nutrient-Rich and Comforting Recipe

Enjoy this flavorful low-calorie, nutrient-rich clear vegetable soup that is dense in fiber, keeps you hydrated, and supports your digestion.


Ingredients:

  • 1 teaspoon olive oil or ghee

  • 1 spring onion, finely chopped

  • 2 carrots, finely chopped

  • 2 celery stalks, finely chopped

  • 2 cloves garlic, minced

  • 1 small piece ginger, minced

  • 6 cups vegetable broth

  • 1/2 cup finely chopped cabbage

  • 1/2 cup green beans, finely chopped

  • 1/2 cup finely chopped broccoli

  • 1/2 cup finely chopped cauliflower

  • 1/2 cup of mini bell peppers finely chopped.

  • 1 teaspoon dried oregano

  • Salt and white pepper powder to taste

  • Juice of 1/2 a lemon.

  • Fresh coriander and spring onions for garnish

Instructions:

  1. In a large pot, heat olive oil or ghee over medium heat. Add minced garlic and ginger and cook for a minute.

  2. Add all the vegetables to the pot. Cook for a few minutes until vegetables start to become tender.

  3. Pour in vegetable broth.

  4. Season the soup with dried oregano, salt, and pepper. Stir well.

  5. Bring the soup to a boil, then reduce the heat to low and let it simmer for 5 minutes or until all the vegetables are tender.

  6. Taste and adjust seasoning if needed.

  7. Serve the clear vegetable soup hot, garnished with fresh coriander and spring onions.
