Watermelon Gazpacho
This is a perfect recipe to stay hydrated and beat the summer heat. You will get all your electrolytes with this Gazpacho. This recipe is rich in Vit A, Vit C, Vit K, Potassium, Magnesium, and lycopene.
1 cup watermelon juice (from fresh watermelon)
½ cup cucumber juice (from fresh cucumber)
¾ cup cucumber (peeled, seeded, and diced)
1 cup watermelon (small cubes)
3 tbsp mint (finely chopped)
1 tbsp fresh ginger juice
1 tbsp red wine vinegar
2 tbsp lime juice (freshly squeezed)
¼ tsp salt
1/4 tsp black pepper
1/2 tsp fruit chat masala (optional)
Juice watermelon and cucumber in the juicer. Remove the pulp and add the juice to a large mixing bowl.
In a mixing bowl, add cucumber, watermelon, mint, vinegar, salt, black pepper, ginger juice, mint leaves, and lime juice. Stir gently to mix all ingredients.
Keep in the refrigerator for a couple of hours to chill.
Serve chilled.
