Vegetable Quinoa Bowl

Get enhanced benefits of phytonutrients and fiber by adding color to your meals with this delicious Quinoa Bowl.

Ingredients:

  • 2 cups water

  • 1 cup quinoa

  • 1 teaspoon turmeric

  • 2 cloves of garlic, diced

  • 1/2 a cup of onion diced

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon cumin powder.

  • Salt and pepper to taste

  • ½ a lemon, juiced

  • ½ of an avocado

  • ½ cup of halved cherry tomatoes

  • romano lettuce shredded

  • 1/2 cup sliced cucumbers

  • Sweet peppers or capsicum

  • 1/4 cup cooked diced beets

  • 1/4 cup shredded red cabbage

  • Cilantro

  • 1/4 cup cooked corn kernels

  • 1 teaspoon organic ghee

Instructions:

In a saucepan combine rinsed quinoa and 2 cups of water and bring to a boil over medium-high heat. Reduce heat and simmer uncovered until quinoa has absorbed all of the water (about 10-20 minutes).

Remove from heat, cover, and let steam for 5 minutes. Fluff quinoa with a fork.

In a saucepan, warm ghee, add onions and garlic, saute and cook till translucent, add red chili powder, turmeric powder, cumin powder, salt, and pepper. Add the cooked quinoa, mix well for 30 seconds or till spices are properly cooked and mixed.

Serve in a bowl and squeeze lemon juice over top if desired. Top with romano lettuce shredded, sliced cucumbers, sliced tomatoes, red cabbage, capsicum, beets, corn kernels, and avocado. Enjoy.
