Sautéed Broccolini with Garlic and Sesame Seeds

This recipe is rich in fiber, low in carbs, and filled with vitamins, minerals, and phytonutrients. It has healthy fats, no added sugar, and is highly flavorful. The combination of garlic and sesame seeds adds flavor without relying on excessive salt or sugar, making it a savory and satisfying option for those with diabetes.

Ingredients:

  • 1 bunch of broccolini

  • 2 tablespoons sesame seeds (White or Black)

  • 2 tablespoons olive oil

  • 3-4 cloves of garlic, minced

  • Salt, and pepper to taste

  • 1-2 teaspoons soy sauce (optional)

  • Red pepper flakes (optional, for some heat)

  • Lemon wedges and roasted almond slices for garnish (optional)

Instructions:

  1. Prepare the Broccolini:

    • Wash the broccolini and trim about 1 inch off the tough stem ends. If the broccolini stems are thick, you can also make a shallow slit lengthwise to ensure even cooking.

  2. Toast Sesame Seeds:

    • In a dry skillet, toast the sesame seeds over medium-low heat. Stir them constantly for 2-3 minutes or until they turn light golden brown. Remove them from the skillet and set them aside.

  3. Blanch the Broccolini:

    • Bring a large pot of salted water to a boil. Prepare a bowl of ice water. Blanch the broccolini in the boiling water for about 2 minutes until they turn bright green. Immediately transfer the broccolini to the ice water to stop the cooking process. Drain them and pat them dry with paper towels.

  4. Sauté the Broccolini:

    • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant. If desired, add a pinch of red pepper flakes for some heat.

  5. Add Broccolini:

    • Add the blanched broccolini to the skillet. Toss them with the garlic and olive oil to coat them evenly.

  6. Sauté:

    • Sauté the broccolini for 3-4 minutes, or until they become tender and slightly caramelized, but still crisp. Stir occasionally to ensure even cooking.

  7. Season and Finish:

    • Season the broccolini with salt and pepper to taste. If desired, drizzle a teaspoon or two of soy sauce over the broccolini and toss to combine.

  8. Garnish with Sesame Seeds:

    • Sprinkle the toasted sesame seeds over the sautéed broccolini and gently toss them in the skillet for a minute to let the flavors meld.
