Ingredients:

  • 1 cup split yellow moong dal (lentils)

  • 2 cups pumpkin, peeled and diced

  • 1 onion, finely chopped

  • 1 tomatoes, chopped

  • 1 tablespoon green chili, ginger, and garlic paste

  • 1 teaspoon cumin seeds

  • 1 teaspoon turmeric powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder (adjust to taste)

  • 1/2 teaspoon garam masala

  • Salt to taste

  • 2 tablespoons cooking oil

  • Fresh coriander for garnish

Instructions:

  1. Prepare Moong Dal:

    • Rinse the moong dal under cold water. Soak it for an hour. In a pot, cook the moong dal with 3 cups of water until tender. Set aside.

  2. Sauté Aromatics:
