Peach and corn salsa

This refreshing summer recipe bursting with flavors surely will be a big hit at your next barbeque party.

Packed With Nutrients and Antioxidants, Peaches are rich in many vitamins, minerals, and beneficial plant compounds.

  • 2 large not too ripe peaches, peeled and diced

  • 1 large ripe peach, peeled and diced

  • 1 cup fire-roasted corn. Grill 2 corns, let them cool down, remove the kernels or you can buy fire-roasted corn kernels from the supermarket.

  • 2 large tomatoes (boiled, peeled, and seeded. Cut the tomato in half, remove the seeds and then boil on medium flame in a saucepan filled with water for 5-10 minutes till it is soft. Turn off the heat, remove the tomato from the pan, let it cool down and then remove the peel)

  • 2-3 jalapeno peppers, chopped

  • 1/2 cup red onion, diced

  • ½ teaspoon salt

  • Juice of 1 lime or lemon.

Method:

Chop peaches, onion, tomatoes, and jalapenos into big pieces. Add them to the hand food processor. With the help of a hand food processor dice them into tiny pieces. Remove them in a mixing bowl. Add salt, corn kernels, and juice of 1 lemon or lime and mix thoroughly. Taste. Add more salt if needed. Garnish with Cilantro and relish.
