Methi Bhaji Pakora (Fenugreek Fritters)

This flavorful snack is made with fresh fenugreek leaves (methi) and spices. Here's a simple recipe:

Ingredients:

  • 1 and 1/2 cups fresh methi leaves (fenugreek), finely chopped and triple-washed

  • 1 cup gram flour (besan)

  • 1/2 cup whole wheat flour

  • 1 medium banana mashed.

  • 1 small onion, finely chopped

  • 3 green chilies, finely chopped

  • Paste of 3 cloves of garlic

  • Paste of 1/2 inch ginger

  • 1/2 teaspoon carom seeds (ajwain)

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1/4 teaspoon garam masala

  • 1 teaspoon amchur or dry mango powder

  • A pinch of asafoetida (hing)

  • Salt to taste

  • Water (as required)

  • Oil for deep frying

Instructions:

  1. Prepare the Batter:

    • In a mixing bowl, add all the ingredients except oil and mix well.

    • Gradually add water to make a thick batter. The batter should not be too runny.

  2. Heat Oil:

    • Heat oil in a deep frying pan on medium heat. The oil should be hot but not smoking. Once the oil is heated, gently take out 2 teaspoons of oil and add in the batter. Mix well.

  3. Fry the Pakoras:

    • Once the oil is hot, take small portions of the batter using your fingers or a spoon and gently drop them into the oil.

    • Fry the pakoras until they turn golden brown and crisp on all sides.

    • Remove them using a slotted spoon and place them on a paper towel to drain excess oil.

  4. Serve:

    • Serve the hot Methi Bhaji Pakoras with green chutney, tamarind chutney, or ketchup.
