Homemade vegetarian crockpot chili

Vegetarian crockpot chili is one of my favorite complete meals full of fiber, healthy protein, and healthy complex carbohydrates power-packed with flavors. This complete meal can be easy weeknight or weekend lunch or dinner. The choice is yours.

Ingredients:

1 tablespoon oil

1/2 tablespoon ginger garlic paste

1 cup organic mirepoix or 1 medium onion, 1 large carrot, and 1 large celery

¾ cup of soy veggie crumbles (beyond meat crumbles)

2-3 large finely chopped tomatoes

1/4 cup cannellini beans. Soaked overnight.

1/4 cup black beans. Soaked overnight.

1/4 cup garbanzo beans. Soaked overnight.

2 cups vegetable stock or broth

1 and ½ teaspoons of garlic powder

1 and ½ teaspoons of onion powder

1 and ½ teaspoons of cumin

1 teaspoon of chipotle chili powder

1 teaspoon of regular chili powder

½ a teaspoon of mustard powder

black pepper to taste

salt to taste

1 teaspoon of oregano

1 jalapeno (finely chopped)

1/4 cup corn kernels

Method:

In a pan, add oil and heat on a medium flame. Once the oil is hot enough, add ginger garlic paste and finely chopped 1 cup organic mirepoix or 1 medium onion, 1 large carrot, and 1 large celery. Mix thoroughly.

Once the vegetables are cooked, add all the spices which are garlic powder, cumin powder, onion powder, mustard powder, salt, oregano, chipotle chili powder, regular chili powder, Black pepper powder. Mix well and cook the spices.

Once spices are cooked for 1-2 minutes, add 1/2 cup of water and soy crumbles. Cook them thoroughly.

Add this cooked mixture to the slow cooker. Add all the beans to the slow cooker as well. Mix well.

Add 2-3 cups of vegetable broth. 1 finely chopped jalapeno and 1/4 cups corn kernels. Mix well.

Cook for 8-10 hours at a medium temperature of your slow cooker. You can prep this and put it in the slow cooker before bed and let it cook overnight or you can put it in the morning so that your dinner is ready when you come home.

Once the beans are cooked, chop the tomatoes, add them to the mixture and let them cook for an hour or so. Once everything is cooked, use a hand blender and run it in the chili mixture for 2-3 minutes so that the chili is blended well. Do not over-blend the chili because you still want the chunks in your chili.
