  • 1 celery stalk, diced

  • 1 medium-sized sweet potato, peeled and diced

  • 6 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • Salt and pepper to taste

  • Juice of half a lemon

  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  • Sauté Aromatics:

    • Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.

  • Add Ginger and Turmeric:

    • Add minced garlic, grated ginger, and grated turmeric to the pot. Sauté for 1-2 minutes until fragrant.

  • Vegetable Prep:

    • Add diced carrots, celery, and sweet potato to the pot. Stir and cook for another 5 minutes.

  • Spices:

    • Sprinkle ground cumin and coriander over the vegetables. Stir well to coat the vegetables with the spices.

  • Broth Addition:

    • Pour in the vegetable broth. Bring the soup to a gentle boil.

  • Simmer:

    • Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes or until the vegetables are tender.

  • Seasoning:

    • Season the soup with salt and pepper according to your taste.

  • Blend (Optional):

    • For a smoother consistency, you can use an immersion blender to blend the soup. Alternatively, leave it chunky if you prefer.

  • Lemon Juice:

    • Squeeze the juice of half a lemon into the soup for a refreshing twist. Adjust the acidity to your liking.

  • Garnish:

    • Serve the soup hot, garnished with fresh cilantro or parsley if desired.
