Apple pecan oatmeal

With winter knocking on our doors, our family craves for warm breakfast in the morning. Over and above omelet, scrambled eggs, and other breakfast ideas apple pecan oatmeal is one of our favorite.

This recipe is rich in dietary fiber, healthy carbs, heart-healthy fatty acids, and more than 19 vitamins and minerals. Oats may help you lower cholesterol and stabilize blood sugar when cooked without too much added sugar. At the same time, it can increase your blood sugar if you add too much sugar so one has to restrict themselves when it comes to added sugar. This recipe serves 3 people.

Ingredients

  • 1 large or 2 small apples peeled cored and chopped, about 1 cup

  • 1 tablespoon ghee

  • Pinch of salt

  • 1 1/2 cups old fashioned oats

  • 2 tablespoons honey

  • 1/4 to 1/2 teaspoon cinnamon

  • Chopped pecans or walnuts, optional

  • 1/4 teaspoon cardamom

  • 2 cups almond milk or regular milk or water (as per your preference)

  • 2-3 tablespoons almond flakes for garnish.

Method:

In a medium saucepan add almond milk, pecans, and oats. Heat the pan on medium heat, bring the mixture to boil, cook for 3-4 minutes till oats are cooked. Turn off the heat. Let the oats cool down to lukewarm and then add honey to the pan. Mix well and then transfer the oats to serving bowls.

Put a medium saucepan on medium-low heat on the stove, add ghee. Once the ghee melts, add chopped apples, cinnamon, and cardamom. Stir and cook for 2-3 minutes till apples are slightly cooked. You still want them to be a little bit crisp.

Top the oats in serving bowls with cooked apples. Garnish with almond flakes and enjoy.
